His first question on the way to Faralya wasn’t about the kitchen at all — it was whether his dog could come along. The answer came back warmly: of course. “Everything is ready, we’re expecting the gentleman,” the team wrote — not quite knowing what a celebrity they were about to host.
“I’m a market man — wherever I go, I have to find the market. The moment this menu was confirmed, my first questions were: when is market day here, and which market can we get to? Wherever we cook, those are the questions that matter.”
